Fresh Fig Muffins




Mix these dry ingredients in a large bowl:

1 C Self Raising Flour
1 C Rolled Oats
1/2 C raw sugar
2 tsp mixd spice
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp sea salt

Melt 75 g salted butter in a small pan. Let cool a little then mix in one egg and 1/2 C of milk and 1 and a half cups of chopped fresh figs.


Mix the wet ingredients into the dry ingredients gently.

Put into muffin moulds and cook at 200 degrees Celsius for about 15 minutes. They should spring back when pressed.


Let them cool a little in the pan before removing after baking.
